Mango Coconut Muffins

Today is Apolinaras’ birthday! He actually doesn’t have much of a sweet tooth and is one of those weirdos who will take all the frosting off his cupcake before eating it. He also prefers fruity ice creams instead of the over-the-top decadent versions I enjoy (Chubby Hubby, peanut butter and chocolate, mint Oreo, etc), so we always have to have several flavors in the fridge. The good news is that he never dips into my stash. The bad news is that we can never share an ice cream sundae when we’re out!

Anyway, I’ve mentioned before that he really likes pineapple and coconut together, so this year I mixed it up a bit and made him celebratory mango coconut muffins. He loved them and not only immediately let everyone know by tweeting, but also insisted I post the recipe today, even though I just whipped these golden muffins up this morning – success! Oh, and if you have more of a sweet tooth, like myself, I think these would be fabulous with some coconut cream cheese frosting on top!

Ingredients:
24 ounces frozen mango chunks, thawed and drained (from Trader Joe’s)
3/4 cup granulated sugar
1/2 cup canola oil
1 large egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sweetened flaked coconut

Directions:
Place thawed mango chunks in a food processor and pulse until smooth, about 1 minute. Place mango puree in a small nonstick pan and cook over medium heat for 20 to 25 minutes or until reduced to 1 cup, stirring occasionally. Remove from heat and let cool to room temperature.

Heat oven to 350°F. Line 10 cups of a 12 cup muffin tin with papers. Mix cooled puree, sugar, oil, and egg in a large bowl until smooth. Stir in flour, baking powder, and salt. Stir in coconut. Scoop muffin batter evenly into the 10 prepared muffin cups, so they are 3/4 full. Bake at 350˚F for 24 to 28 minutes or until a toothpick inserted in the center of each muffin comes out clean. Makes 10 muffins.

Tuscan Frittata

I’ve gotten into the habit of buying one pound logs of goat cheese from Costco and since goat cheese goes bad faster than other varieties, I’m always trying to quickly use it in several different ways after opening the package – there’s nothing worse than wasting goat...

Apple Brie Scones

Happy Halloween! After dressing up as Jem, my favorite 80s TV character for the past several years, I decided to fast forward to the 90s this year and go as Angela Chase from My So-Called Life, which is seriously one of the best shows ever! I was a little nervous no...

Green Eggs and Ham

Wednesdays have quickly become my favorite night to relax in front of the TV because I love Top Chef and have become addicted to Glee. I was so disappointed this week when Glee wasn’t on due to the World Series and the “Top Chef All Stars Dinner” was on instead...

Fajita Frittata

My mom used to make breakfast for dinner every Thursday night when I was growing up and I always looked forward to it. Really, is there anything better than a big plate full of cheesy eggs, pancakes with melted butter and maple syrup, and fruit salad? I would love to...

Strawberry Cheesecake Pancakes

This recipe is for my mom. She love pancakes and considers them a breakfast treat. She would often make pancakes on the weekends while my brother and I were growing up and always took the extra time to spell out our names (7 pancakes – score!). She usually ended up...

Individual Breakfast Pot Pies

I’ve been waking up a couple hours earlier than Apolinaras on the weekends lately. My grumbling tummy and earlier bed time (pregnancy can be exhausting!) are to blame. I’ve been putting the time to good use though. First, I devour a bowl of cereal or some yogurt and...

Hawaiian Omelet

There are a fair number of cooking techniques that I have yet to master, and one that I’m particularly interesting in conquering is how to make the perfect omelet. I feel like it's always mentioned on Top Chef how cooking eggs is a measure of a chef’s skills and well,...

Blueberry Cottage Cheese Squares

It's finally time for our Lithuania trip recap! We traveled throughout the country and I'm going to spread the highlights of our adventure over the next three posts. Lithuania is the same size as West Virginia and sits above Poland and Belarus and across the Baltic...
