Soba Noodles with Eggplant, Snow Peas, and Tofu

Main Dishes

We’ve been so busy lately that I’ve baked more “emergency” frozen pizzas for dinner than I’d care to admit. I have managed to whip up some soba noodles a couple of times though. They’re so quick and tasty, and there’s nothing better than a one pot meal. For this version I mixed in tamarind eggplant, snow peas, and tofu, along with my favorite sesame soy dressing – yum!

Ingredients:

5 tablespoons canola oil, divided
1 large eggplant, chopped into bite-sized cubes
1 tablespoon tamarind concentrate
1/2 cup hot water
9 ounces snow peas
15 ounces extra firm tofu, cut into bite-sized cubes
1 pound soba noodles
1/4 cup soy sauce
1/4 cup rice vinegar
1 tablespoon toasted sesame oil
1 tablespoon honey
2 cloves garlic, minced

Directions:
Heat 2 tablespoons canola oil over medium high heat in a large pan or wok; add eggplant to the pan and sauté for 3 minutes, stirring occasionally, or until lightly browned. Stir tamarind concentrate into hot water until well dissolved and pour into the pan. Simmer eggplant in tamarind liquid over medium heat for 8 minutes; add snow peas and tofu to the pan, stir well, and simmer an additional 5 to 8 minutes or until eggplant and snow peas are tender and all the liquid has evaporated.

Prepare soba noodles according to package directions, drain, and rinse with cold water. Place soba noodles in a large bowl. Mix soy sauce, rice vinegar, 3 remaining tablespoons canola oil, sesame oil, honey, and garlic in a small bowl and mix well. Pour dressing over soba noodles and toss until evenly coated; stir in eggplant, snow peas, and tofu. Makes 6 servings. Serve cold or at room temperature, if desired.

Blackened Chicken Breasts Stuffed with Blue Cheese and Bacon

Apolinaras is pretty spoiled in the culinary department.  Last weekend I made a bunch of tofu fried rice for my weekday lunches, and also cooked up a separate batch of chicken breasts for him because he likes to loudly proclaim the fried rice is the worst dish I...

Walnut Crusted Pineapple Chicken

The last part of our trip was spent on the Lithuanian coast in several resort towns by the Baltic Sea. We were there pretty early in the season so it was still a bit chilly at the beach and I just got my feet wet, although Apolinaras actually swam a couple of days! We...

Salmon over Coconut Broth with Baby Bok Choy, Snow Peas, and Mushrooms

I have to admit that even though I consider myself a “foodie,” sometimes hearing about the local/organic food debate tires me out. Ideally, we’d all get all our food from farmers in our state who use no pesticides, right? But it’s not really economical for most people...

Chicken Parm Eggplant Stacks

Do you enjoy any odd snack foods? I have a thing for croutons. Not only do I go out of my way to scoop as many as is politely possible onto my salad plate at buffets, I also really like snacking on them on their own – yep, right out of the package and usually when I’m...

Mediterranean Eggplant Stacks

You may have noticed that I’ve been on a bit of a Mediterranean kick lately – chickpeas, roasted red peppers, and feta have all been making me very happy and this dish is no exception. I wanted to come up with a fun vegetarian main dish to serve at an upcoming dinner...

Truly Outrageous Baked Sweet Potatoes

I love Halloween and have gone as the rocker Jem of the 80s hit cartoon Jem and the Holograms three years in a row now. I have no shame, I loved Jem growing up and adore the costume so much that I may even use it again at some point! I have very fond memories of...
