Sun Dried Tomato Turkey Meatloaf

Main Dishes

Poor meatloaf. I think meatloaf tends to get a bad rap, but I will always have a soft spot for it because it was the first dish I ever made for Apolinaras. I was a baby of 22 and just starting to get comfortable in the kitchen when I invited him over for dinner. We’d only been dating for a few weeks, but he had actually already cooked for me and made a lovely bacon wrapped chicken, which only made me a bit more nervous about my own culinary skills. I decided on meatloaf and roasted potatoes with green beans because it was cold out and I was craving something comforting. Even though I was living in grad student housing and had a very small kitchen with maybe 3 feet of counter space, I managed to get the meatloaf in the oven in plenty of time, only to make a frantic phone call to my mom half an hour later because I thought I had burned the onions (don’t worry, they were actually just caramelized!).  Much to my relief, everything somehow came out perfectly and Apolinaras was hooked – he still requests meatloaf often to this day!

I’ve experimented with various versions over the years and this is my favorite. It’s very moist and flavorful because it’s packed with cooked veggies and sun dried tomatoes. No sauce is needed – it is absolutely perfect on its own!

Bacon and Mushroom Stuffed Chicken Breasts over Sweet Potato Hash

I’m always on the hunt for new chicken recipes and often times will just write “chicken” on my blog recipe idea list as motivation to dream up something new! Stuffed chicken is one of our favorites, and I especially love using a little mascarpone cheese in the filling...

Flank Steak with Red Wine and Tamarind Sauce

Citrus Glazed Salmon

When I got home from New Orleans this week, I found 3 salmon fillets that my hubby had defrosted in the fridge. Apolinaras is a great cook and loves to grill and throw meals together with whatever is laying around. Because he doesn’t ever follow recipes or write...

Cheddar, Feta, and Pecorino Romano Mac & Cheese

First of all, thanks to everyone who entered my blogiversary giveaway. A few of you correctly guessed the very common ingredient I don’t like is....black pepper! In fact, when Apolinaras wants to make sure I don’t dig into his portion of mac & cheese, he’ll...

Ancho Honey Chicken over Tropical Rice

My younger brother went through a phase when he was about five where he was obsessed with cantaloupe. I remember him easily downing four or five slices at a time, which I didn’t really understand since I was such a picky eater. In fact, I used to regularly make fun of...

Moroccan Stuffed Acorn Squash

Mushroom Walnut Pesto Pasta

Apolinaras went to Costco while I was on my baking adventure and brought home a fun present - a huge canister of dried gourmet mushrooms! The blend contained a mix of porcini, morels, Brazilian, Ivory portabellas, shiitake, and oyster mushrooms, and I immediately knew...
