I cut back on the oil a bit (1 tbsp to saute the eggplant) and 1 tbsp for the chicken and zucchini. I also cooked the onion and garlic at the same time as the eggplant. I added a bit of the pasta water to the sauce because it was a bit thick to coat the pasta. Thank you again for a wonderful recipe! I made the pasta tonight — amazing sauce!
