I hope you are having a wonderful birthday!!!!!!! I too wonder where the time has gone! And wow, I’m impressed that Apolinaras refused a cake on his birthday! That’s hard to do – training or not! This sundae looks really delicious! I bet the crunch of the coconut provides a nice texture to the dessert (I’m gearing up to watch Top Chef tonight so their verbiage is infiltrating my brain!)

This looks so yummy. I used to eat cottage cheese a lot before I became lactose intolerant, and I do so miss it. I always found it to be filling and satisfying with fruit. Congrats on reaching the big 3-0, and may you have many more happy and healthy years ahead of you! Enjoy your carrot cake.
