We’re up in Portland, Maine, celebrating our wedding anniversary this holiday weekend! I always try to make some sort of treat for snacking during road trips and this time baked up a batch of macaroons, which are Apolinaras’ absolute favorite cookie. I never have to ask him what to order when we’re in bakeries – he always picks macaroons!
These are extra special macaroons because they have Nutella in them. I’m not a huge macaroon fan myself, but the Nutella in these makes them pretty irresistible. They also come together really quickly. I whipped them up while we were packing for our trip on Saturday morning. We may or may not only have three cookies left… I hope you’re all enjoying the long weekend!
2 cups sweetened flaked coconut
1/4 cup granulated sugar
1/4 cup all-purpose flour
1/2 cup Nutella
2 large egg whites
Heat oven to 350°F. Stir coconut, sugar, and flour together in a large bowl. Stir in Nutella and egg whites until a soft dough forms. Use a 3/4 ounce cookie scoop to place 15 cookies on a large greased baking sheet. Bake at 350°F for 13 to 15 minutes or until set and cool on a cooling rack for 30 minutes. Makes 15 macaroons.
