I am SO with you on breakfast sandwiches. I think I posted a mini bagel sandwich a while back but mine was dripping with egg. Haha. I love ‘em, so many different ways and I love that you have ricotta on these. So delicious.

I love how you gourmet-ed this breakfast sandwich up with some ricotta and basil. Way to take it to a whole new level. I am on such a bagel kick lately although I usually smother them in peanut butter rather than try to do anything interesting with them. This is tempting me though.
